Since wild salmon is a seasonal item, Chef's Fresh Fish offers a re-freshed Alaskan Sockeye Salmon Fillet. Re-freshed means the fish was frozen at it's freshest then safely and slowly thawed. Day boats bring in a load of sockeye from their daily catch and then the fish is cryovaced (sealed in plastic) and then submerged in below freezing water and salt solution for quick and optimal freezing instead of ice glazed like some freezing processes. This is the perfect way to enjoy wild salmon year-round. The Alaskan sockeye salmon fillets are pin-bone in, therefore will need to be removed either before or after cooking.
