Sustainability
  • Tuna are worldwide travelers, classified as highly migratory species (HMS), so international efforts are required to ensure their conservation. The United Nations (U.N.) oversees the international conservation and management of HMS through the Food and Agriculture Organization and regional scientific commissions, such as the Pacific-based Inter-American Tropical Tuna Commission (IATTC). Fishery scientists from these commissions monitor and assess highly migratory fish populations and provide a forum for harvesting nations to implement conservation measures.

I enjoyed cutting the ahi for the ceviche.  It was very sweet.  Most of the meat was the easy-to-cut portion.  i don't mind the fibrous tip area, but that's in every cut.

This sushi grade tuna is beautiful.  We served some thinly sliced with ginger, scallions and soy sauce and then made a "tuna tower" like the recipe on the site. Perfect for sushi night at home
